Why Choose Caterra Coffee Teras Nusantara

Processing System

Our processing approach is designed to achieve clarity, consistency, and optimal flavor expression through controlled and measurable parameters. Each batch is handled with precision, combining traditional methods with scientific monitoring to ensure repeatable results.

  • Natural ProcessWhole cherries are carefully selected and dried under controlled conditions, allowing prolonged contact between fruit and bean to enhance body and develop complex, fruit-forward flavor profiles.

  • Full Washed Process Cherries are depulped and undergo controlled fermentation to remove mucilage, followed by thorough washing and uniform drying to produce a clean cup with bright acidity and clarity.

  • Honey Process Partial mucilage is retained during drying, balancing sweetness, body, and acidity while maintaining structural clarity in the cup.

All processes are supported by controlled fermentation protocols, moisture monitoring, and post-harvest handling standards. Beans are stabilized to an optimal moisture content (~11–12%) and rested prior to milling to ensure consistency, shelf stability, and export readiness. Each lot is cupped and evaluated to maintain quality consistency.
